Evies Potato Casserole

10 Servings

6 Potatoes (Medium Sized)
1/2 Cup Butter
2 Cups Cheddar Cheese, Shredded
2 Cups Sour Cream
1/3 Cup Green Onions, Chopped
1 Tsp Salt
1/4 Tsp Pepper
2 Tbl Butter, For Dotting Top

Cook potatoes in skin the night before, or peel and boil until just slightly tender. Chill, peel and grate into a large bowl. In a medium sauce pan, heat butter and cheese until melted. Remove from heat. Blend butter mixture with sour cream, onions, salt and pepper. Pour over potatoes, stirring lightly.
