3 Lb Roasting Chicken
2 Large Garlic Cloves
2 Tbl Olive Oil
1 Tbl Fresh Tarragon, Minced
1 Tsp Sage, Crushed
3/8 Cup Basalmic Vinegar
6 Small New Potatoes
1/4 Cup Greek Olives, Pitted & Minced
1. Preheat oven to 375? F. Lightly oil a large roasting pan or deep casserole.
2. Remove skin from chicken. Place chicken in roasting pan, breast side up. Peel and halve garlic cloves, rub surface of chicken with cut garlic, then place cloves inside
